Recipe - Milkless & Eggless Pancakes



One morning upon mixing all the dry ingredients and oil for pancakes I realized I was out of eggs and didn't have enough milk. I had read somewhere that you can use applesauce as an egg substitute so I figured I would give it a try. I got out the jar of applesauce and added 2 heaping tablespoons of apple sauce and 1- 1/4 cup of water. After mixing thoroughly to ensure consistency was the same, I then cooked them as usual. We sprinkled on a slight bit of powered sugar and drizzled on syrup to serve! They had a slightly different flavor than my home made sweet milk pancakes, but honestly tasted really good. It's great for making pancakes with no dairy if you are allergic, or just don't have eggs and milk on hand. It's also convenient for cooking in situations where carrying milk isn't practical, such as camping. I have found the single serve apple sauces work really well, just add what you need into the mix and then snack on the rest while cooking!

Milkless & Eggless Pancakes

1 1/4 cup of Flour
2 teaspoons of Baking Powder
3/4 teaspoon of Salt
2 tablespoons of Sugar
3 tablespoons of veg oil
2 -3 tablespoons of Applesauce (I used plain, but I'm sure cinnamon wouldn't hurt anything if that's all you have)
1 1/4 cup of Water
